Excellent grain-free dairy free cheese

"This makes the best melted cheese, like mozzarella fresca or ricotta, in Italian tomato sauce dishes. It also tastes good in caprese salads or sliced on crackers. I love that it's totally grain free. I haven't been able to find this in stores for over a month. Please don't discontinue it or change the recipe! I can't eat grains like rice, corn, or oats.
